Ingredients
1boxyour favorite Mac and Cheese
1tablespoonolive oil
1canlentils, drained and rinsed
1tablespoontomato paste
1tablespoonnon-dairy butter
1/4-1/3cupunsweetened milk of choiceor more, depending on your box recommendations
2large handfulsbaby spinach leaves
Instructions
Prepare the mac and cheese according to package directions
Heat the olive oil in a large skillet, then add the drained and rinsed can of lentils. Add the tomato paste and cook for 2-3 minutes, until lentils are warm and tomato paste is cooked in.
Add in the cheese pack, butter and milk and stir to create the sauce. Add the cooked noodles and fresh spinach leaves and stir until combined and spinach leaves are wilted.
