rolled oats
(can sub 1 cup whole wheat flour)

baking powder
pinch
salt

chia seeds

ripe medium banana
1
teaspoon
vanilla

plant milk of choice
1/4
cup
chopped raw beets
Instructions
In a high-powered blender, combine oats, baking powder, salt, chia seeds, banana, vanilla, plant milk, and beets.
1 1/2 cups rolled oats,
1/2 Tablespoon baking powder,
pinch salt,
1 Tablespoon chia seeds,
1 ripe medium banana,
1 teaspoon vanilla,
1 1/4 cups plant milk of choice,
1/4 cup chopped raw beets
Blend until smooth.
Oil a heart-shaped cookie cutter and place on an oiled skillet. Heat both to medium, then spoon in your batter.
Cook for about 2-3 minutes, then carefully remove the cookie cutter (use tongs if it’s extra hot), and flip.
Add your favorite toppings and enjoy!
Notes
We used chia jam and berries for our topping!
Applesauce can be substituted for the banana.
Canned beets can be used, but the pancakes might turn out mushy. If so, add more oat flour.
