Beet Blender Pancakes – a pretty pink Valentine’s Day breakfast recipe!

These scrumptious cakes are made with a few simple ingredients including oats, chia seeds, and bananas and colored naturally with beets.

Perfectly tied with the holiday, beets are a source of many cardioprotective compounds such as polyphenols and nitrate (a precursor to the vasodilator nitric oxide in the body).

The best part for any beet-phobic family members, you can’t taste them!

Frequently Asked Questions:

Can I use canned beets?
Yes, though they might be a little mushy. If so, try adding more oat flour.

Can I substitute applesauce for the banana?
Yes!

Can I substitute strawberries for the beets?
Sure, but strawberries won’t hold their color as well as beets so the pancakes might turn out a little brown.

Beet Blender Pancakes

Beet Blender Pancakes – a pretty pink Valentine’s Day breakfast recipe!

Ingredients

  • 1 1/2 cups rolled oats (can sub 1 cup whole wheat flour)
  • 1/2 Tablespoon baking powder
  • pinch salt
  • 1 Tablespoon chia seeds
  • 1 ripe medium banana
  • 1 teaspoon vanilla
  • 1 1/4 cups plant milk of choice
  • 1/4 cup chopped raw beets

Instructions

  • In a high-powered blender, combine oats, baking powder, salt, chia seeds, banana, vanilla, plant milk, and beets.
    1 1/2 cups rolled oats, 1/2 Tablespoon baking powder, pinch salt, 1 Tablespoon chia seeds, 1 ripe medium banana, 1 teaspoon vanilla, 1 1/4 cups plant milk of choice, 1/4 cup chopped raw beets
  • Blend until smooth.
  • Oil a heart-shaped cookie cutter and place on an oiled skillet. Heat both to medium, then spoon in your batter.
  • Cook for about 2-3 minutes, then carefully remove the cookie cutter (use tongs if it’s extra hot), and flip.
  • Add your favorite toppings and enjoy!

Notes

  • We used chia jam and berries for our topping!
  • Applesauce can be substituted for the banana.
  • Canned beets can be used, but the pancakes might turn out mushy.  If so, add more oat flour.
