Chickpea Cookie Dough Balls
Chickpea Cookie Dough Balls! One of our favorite kid-friendly ways to serve chickpeas. Naturally sweetened cookie dough balls with chickpeas, oats, and chocolate chips.

rolled oats

chickpeas
drained and rinsed
1/2
cup
peanut butter
8
medjool dates
pitted

teaspoon
vanilla extract

teaspoon
salt
1/2
cup
chocolate chips
plus more for drizzling, if desired
Instructions
Add oats to a food processor and pulse until flour consistency.
Add chickpeas, peanut butter, dates, vanilla extract, and salt. Process until a sticky ball forms.
Add the chocolate chips and pulse a few times until they are incorporated. Roll into balls and store in the fridge or freezer.
If desired, drizzle on melted chocolate over the balls if desired!
