Chickpea Cookie Dough Balls! One of our favorite kid-friendly ways to serve chickpeas. Naturally sweetened cookie dough balls with chickpeas, oats, and chocolate chips.

We are big fans of no-cook balls. In addition to these chocolate chip cookie dough balls, we also have recipes for our blueberry chickpea balls, our raspberry chickpea balls and now– these cookie dough balls.

If you are looking for more chickpea-based recipes to feed your kids, then you’ve gotta try these chickpea dough balls!

To make these, start by pulsing the oats in a food processor or high speed blender until they reach flour consistency.

Add the chickpeas, peanut butter, pitted dates, vanilla extract, and salt and process until a sticky dough forms.

Note that you can purchase either already-pitted dates or buy ones that need to have their pits removed at home. To remove date pits, simply take a knife or fork and slice them lengthwise to expose the pit. You can them remove this with your fingers and discard.

Finally, add chocolate chips and pulse until combined.

Using a spatula, remove the dough from the food processor or blender and place it in a bowl or on a clean counter top.

Use your hands to roll it into balls, approximately 1-inch in diameter. (This is the scoop we love!)

Place the balls in a flat, airtight container or on a plate covered with plastic wrap, and store in the refrigerator. Here, they will firm up a bit.

You can also store these in the freezer!

If you want extra chocolate flavor, then I like to melt additional chocolate chips and drizzle them over the balls.

Equipment

  • Food processor

Ingredients

  • 1 cup rolled oats
  • 1 can chickpeas drained and rinsed
  • 1/2 cup peanut butter
  • 8 medjool dates pitted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips plus more for drizzling, if desired

Instructions

  • Add oats to a food processor and pulse until flour consistency.
  • Add chickpeas, peanut butter, dates, vanilla extract, and salt. Process until a sticky ball forms.
  • Add the chocolate chips and pulse a few times until they are incorporated. Roll into balls and store in the fridge or freezer.
  • If desired, drizzle on melted chocolate over the balls if desired!

    If I don’t have dates would syrup work or would it be too runny?

      yes, you can serve these to an 18 month old, I would just make sure the chocolate chips are finely chopped

    Delicious! Used almond butter (in place of peanut butter) and mini chocolate chips. Easy to roll into balls as not overly sticky. Would absolutely make again!

    Easy to make and delicious! I can’t stop grabbing them out of the fridge for a quick snack and neither can my 7-year-old.

    These are pretty quick to put together, and with the chocolate chips my kids definitely enjoyed them! It’s a great sweet treat that is majority whole foods, we will definitely make them again.
