Chickpea Noodle Soup

Ingredients

olive oil

sweet yellow onion
diced

large
carrots
chopped
3
stalks
celery
chopped
3
cloves
garlic
minced

teaspoon
poultry seasoning

15 oz can
chickpeas
drained and rinsed*
8
cups
vegetable broth
1
bay leaf
(optional)

pasta of choice
cooked
Instructions
Heat olive oil in a large stockpot over medium heat. Add onion and cook for 5-6 minutes until soft and lightly browned.
Add carrots, celery, and garlic. Cook for another 5-6 minutes.
Stir in poultry seasoning and cook for 30 seconds more.
Add chickpeas, vegetable broth, and bay leaf. Bring to a simmer for 20 minutes.
Add cooked pasta. Serve!
Notes
*Or 1.5-2 cups cooked chickpeas.
