Ingredients
2cupsrolled oats
1Tablespoonchia or ground flaxseed
1teaspooncinnamon
1teaspoonbaking powder
1/2teaspoonsalt
1 1/2cupssoy milk
1/2cuporange juice
1/4cupmaple syrup
1/2Tablespoonvanilla
1Tablespoonorange zest (optional)
1cupfresh or frozen cranberries
Instructions
Preheat oven to 375 F.
In a large bowl, mix together rolled oats, chia or ground flaxseed, cinnamon, baking powder, and salt.

In a medium-sized bowl, mix together soy milk, orange juice, maple syrup, vanilla, and orange zest (optional).

Add wet and dry ingredients together, then fold in 1 cup of fresh or frozen cranberries.

Pour into a greased 8x8 dish.
Bake for about 40 minutes, uncovered.
Allow to cool, then serve with your favorite toppings - maple syrup, peanut butter, or whipped cream all taste great!
