Cranberry Orange Oat Bake

Got leftover cranberries? Make this easy, healthy cranberry orange oat bake! It takes about 5 minutes to toss together and leaves you with several days of delicious breakfasts.

Made with rolled oats, fresh orange juice, and cranberries, it’s a scrumptious, nourishing, and zesty breakfast option that is easy to meal prep and serve all week long. It got my cranberry-skeptical son downing this sweet and sour fruit!

Simply mix all your ingredients together, add your berries, and bake! Then serve with your favorite toppings – maple syrup, peanut butter, or whipped cream all taste great!

  • Nutrition! With 2 cups of rolled oats, this Cranberry Orange Oat Bake contains one of the best nutritional plant-based pantry staples. Oats are high in a type of soluble fiber called beta-glucans, which are beneficial for both blood sugar regulation and heart health. Oats also contain protein, providing 5 grams per 1/2 cup of raw oats.
  • Food-Chaining! Food-chaining is when you serve a new food along with a food your child already knows and likes. This is a great way to introduce foods your child might be skeptical of trying, such as the cranberries in this recipe. For example, your kiddos might already like oat-based breakfast bars and honey, so adding cranberries to this oat bake, and giving them honey to pour on top provides a familiar taste alongside a new one. Ingredients

  • 2 cups rolled oats
  • 1 Tablespoon chia or ground flaxseed
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups soy milk
  • 1/2 cup orange juice
  • 1/4 cup maple syrup
  • 1/2 Tablespoon vanilla
  • 1 Tablespoon orange zest (optional)
  • 1 cup fresh or frozen cranberries

Instructions

  • Preheat oven to 375 F.
  • In a large bowl, mix together rolled oats, chia or ground flaxseed, cinnamon, baking powder, and salt.

  • In a medium-sized bowl, mix together soy milk, orange juice, maple syrup, vanilla, and orange zest (optional).

  • Add wet and dry ingredients together, then fold in 1 cup of fresh or frozen cranberries.

  • Pour into a greased 8×8 dish.
  • Bake for about 40 minutes, uncovered.
  • Allow to cool, then serve with your favorite toppings – maple syrup, peanut butter, or whipped cream all taste great!
