Ingredients
2tablespoonsolive oil
1onionfinely chopped
1teaspoontomato paste
1cuporzo pasta whole-wheat preferred
1cupfrozen mixed vegetables
2cupsvegetable broth
1tomato chopped
Instructions
Heat olive oil in a large skillet over medium heat and add the onion. Sauté for 5 minutes, or until softened.
Add tomato paste, frozen vegetables, orzo pasta, and vegetable broth. Stir together, cover, and simmer until pasta is tender, about 12 minutes.
Notes
We tested this recipe using a frozen vegetable medly of green beans, corn and peas. However, any frozen vegetable medley will work. If using a larger size vegetable, you may what to chop the thawed vegetables first. If you want a creamier pasta, we recommend adding in a little butter/parmesan cheese of choice!
