Frozen Veggie Orzo Pasta

This vegan veggie orzo pasta is great for busy weeknights! Made with frozen vegetables and orzo pasta in a simple tomato broth.

This weeknight-approved dinner takes advantage of pantry favorites. items, like dried pasta, frozen veggies, tomato paste, and broth. You only need a handful of ingredients to make this delicious orzo pasta recipe.

We may be registered dietitians, but we’re moms first- which means we know firsthand the struggle of putting dinner on the table every night. We know the joy that comes from feeding kids, and also the stress. It can feel like a thankless job many times.

It’s also why we are big on meals that allow us to take shortcuts without sacrificing flavor or nutrition. This delicious orzo pasta is just what we need on nights when we don’t really feel like cooking. It’s what we call an easy button dinner!

Ingredients for this Orzo Pasta Recipe

  • Frozen Veggies
  • Broth
  • Orzo
  • Tomatoes

We are such big fans of using frozen vegetables in our recipes, and this orzo pasta is very similar to our weeknight minestrone recipe.

How to make Veggie Orzo Pasta

  1. Cook the onion

    Heat olive oil in a large skillet over medium heat and add the onion. Sauté for 5 minutes or until softened.

  2. Cook the vegetables

    Add tomato paste, frozen vegetables, orzo pasta, and vegetable broth. Stir together, cover, and simmer until pasta is tender, about 12 minutes.

  3. Add butter and parm, if desired

    That’s it! If you prefer creamier pasta, we recommend adding some of your preferred butter and grated parmesan cheese. We’re partial to Violife’s dairy-free parm or our vegan parmesan cheese.

Health Benefits of Frozen Vegetables

We’re big fans of frozen vegetables over here– and there’s no reason to assume that frozen isn’t as great as fresh. Freezing vegetables helps preserve their nutrients, meaning frozen vegetables can contain even more vitamins and minerals than fresh ones.

Frozen vegetables are often picked at the peak of ripeness and then quickly frozen, which helps to lock in their flavor and texture. Plus, the convenience of having pre-chopped and pre-washed frozen veggies on hand can’t be beat!

Ingredients

  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 1 teaspoon tomato paste
  • 1 cup orzo pasta whole-wheat preferred
  • 1 cup frozen mixed vegetables
  • 2 cups vegetable broth
  • 1 tomato chopped

Instructions

  • Heat olive oil in a large skillet over medium heat and add the onion. Sauté for 5 minutes, or until softened.
  • Add tomato paste, frozen vegetables, orzo pasta, and vegetable broth. Stir together, cover, and simmer until pasta is tender, about 12 minutes.

Notes

We tested this recipe using a frozen vegetable medly of green beans, corn and peas. However, any frozen vegetable medley will work.  If using a larger size vegetable, you may what to chop the thawed vegetables first. 
If you want a creamier pasta, we recommend adding in a little butter/parmesan cheese of choice!
