Waffles, but make them green! We’ll take any reason to add more green to our diets. These waffles are a fun way to add a little color to your kiddo's breakfast, or maybe to serve them for St. Patrick's Day!

Ingredients
1 1/2cupsoat flour
1teaspoonbaking powder
1teaspooncinnamon(we recommend ceylon cinnamon)
pinchsalt
1Tablespoonground flax seed
1medium mashed banana
handfulspinach leaves
1cupunsweetened non-dairy milk of choice
1Tablespoonvanilla extract
Instructions
Mix together 1 1/2 cups oat flour, 1 teaspoon baking powder, 1 teaspoon cinnamon and a pinch of salt.
In a blender, purée 1 tablespoon ground flax seed, 1 medium mashed banana, a handful of spinach leaves, 1 cup unsweetened non-dairy milk of choice and 1 tablespoon vanilla extract.
Add wet to dry and mix together until combined. Let sit for at least 5 minutes to allow the oat flour to rehydrate.
Add to preheated waffle iron and cook according to manufacturer’s directions.
Notes
The spinach in the waffles may make them taste slightly vegetal— to help balance, you can add in a tablespoon of sugar to the batter.
This waffle batter can be made into pancakes, if you prefer! Be sure to use a non-stick pan.
