Green Waffles

Waffles, but make them green! We’ll take any reason to add more green to our diets. These waffles are a fun way to add a little color to your kiddo’s breakfast, or maybe to serve them for St. Patrick’s Day!

We’ve taken our favorite waffle recipe with homemade oat flour, banana, and flaxseed, and then we added a generous handful of spinach. Blend the wet ingredients together, add to the dry, and then cook on your favorite waffle maker.

These take just minutes to put together and are great for both weekday or weekend breakfasts. You can serve them plain or dressed up with almond butter and sliced bananas. However you like them, these waffles will be sure to be a hit in your family. And yes, they can be made into pancakes, too!

Green Waffles

Ingredients

  • 1 1/2 cups oat flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon (we recommend ceylon cinnamon)
  • pinch salt
  • 1 Tablespoon ground flax seed
  • 1 medium mashed banana
  • handful spinach leaves
  • 1 cup unsweetened non-dairy milk of choice
  • 1 Tablespoon vanilla extract

Instructions

  • Mix together 1 1/2 cups oat flour, 1 teaspoon baking powder, 1 teaspoon cinnamon and a pinch of salt.
  • In a blender, purée 1 tablespoon ground flax seed, 1 medium mashed banana, a handful of spinach leaves, 1 cup unsweetened non-dairy milk of choice and 1 tablespoon vanilla extract.
  • Add wet to dry and mix together until combined. Let sit for at least 5 minutes to allow the oat flour to rehydrate.
  • Add to preheated waffle iron and cook according to manufacturer’s directions.

Notes

  • The spinach in the waffles may make them taste slightly vegetal— to help balance, you can add in a tablespoon of sugar to the batter.
  • This waffle batter can be made into pancakes, if you prefer!  Be sure to use a non-stick pan.
