Green Waffles
Ingredients
- 1 1/2 cups oat flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon (we recommend ceylon cinnamon)
- pinch salt
- 1 Tablespoon ground flax seed
- 1 medium mashed banana
- handful spinach leaves
- 1 cup unsweetened non-dairy milk of choice
- 1 Tablespoon vanilla extract
Instructions
- Mix together 1 1/2 cups oat flour, 1 teaspoon baking powder, 1 teaspoon cinnamon and a pinch of salt.
- In a blender, purée 1 tablespoon ground flax seed, 1 medium mashed banana, a handful of spinach leaves, 1 cup unsweetened non-dairy milk of choice and 1 tablespoon vanilla extract.
- Add wet to dry and mix together until combined. Let sit for at least 5 minutes to allow the oat flour to rehydrate.
- Add to preheated waffle iron and cook according to manufacturer’s directions.
Notes
- The spinach in the waffles may make them taste slightly vegetal— to help balance, you can add in a tablespoon of sugar to the batter.
- This waffle batter can be made into pancakes, if you prefer! Be sure to use a non-stick pan.
