How to Microwave a Sweet Potato and Serve It Three Different Ways

Ingredients
As a Side Dish: salt, olive oil, vegan butter
As a Dessert: cinnamon, maple syrup, vanilla yogurt, crushed nuts
As a Main Dish: beans, avocado, shredded cheese
Instructions
Wash and scrub your sweet potato.
Pierce it with a fork to let steam escape.
Wrap in a damp paper towel and microwave for 8-12 minutes, depending on the size of the potato.
Once it's squishy, carefully remove it and slice it up.
To serve as a side dish: Mash with a little salt and olive oil or vegan butter as a quickie side dish.
To serve as a dessert: Sweet sweet potato! Sprinkle with cinnamon and a drizzle of maple syrup for a healthy dessert. Vanilla yogurt and crushed nuts are delish on top as well.
To serve as a main dish: Make Loaded Taters by topping your sweet potato with beans, avocado, and shredded cheese.
