How to Microwave a Sweet Potato and Serve it Three Different Ways!

Did you know you can cook a sweet tater in the microwave in just 8 minutes?! It’s a busy parent’s back-pocket meal saver and a great way to get your daily dose of “carotene queens” (vitamin A) in your kiddo’s diet.

To Cook a Sweet Potato in the Microwave:

  1. Wash and scrub your sweet potato.
  2. Pierce it with a fork to let steam escape.
  3. Wrap in a damp paper towel and microwave for 8-12 minutes, depending on the size of the potato.
  4. Once it’s squishy, carefully remove it and slice it up.

That’s it! In less than 15 minutes, you can have a soft, juicy sweet potato all ready to go for whatever recipe strikes your taste buds. And just like preparing the sweet potato doesn’t have to be hard, serving it up doesn’t have to be hard either. Below are three easy ways to serve a sweet potato.

Three of our favorite ways to serve a sweet potato:

  1. Mashed with a little salt and olive oil or vegan butter as a quickie side dish.
  2. Sweet sweet potato! Sprinkle with cinnamon and a drizzle of maple syrup for a healthy dessert. Vanilla yogurt and crushed nuts are delish on top as well.
  3. For a main dish, make Loaded Taters topped with beans, avocado and shredded cheese.
