This simple miso tofu noodle soup comes together in about 20 minutes and is an easy way to add fermented foods to your kiddo's diet.

Ingredients
4cupsvegetable broth
1piecekombu*optional
3tablespoonswhite miso paste
1blockfirm or extra firm tofuchopped
8oznoodles of choice(udon or soba)

1/2cupgreen onionssliced
1/2cupedamame
4-5sheetsnoricrumbled
1tablespoonsesame seeds
Instructions
Add 4 cups of vegetable broth to a medium-sized pot. If using kombu, add to the pot and bring to a simmer for 10 minutes. If omitting kombu, simply bring to a simmer then proceed to step 2.
In a small bowl, whisk together miso paste and 2 tablespoons of the warm broth. Then, add miso to the vegetable broth and stir to combine. If using kombu, remove from the pot.
Add tofu to the pot and continue simmering for 5 minutes.
While the tofu cooks, cook noodles according to package directions. Drain and set aside.
Distribute noodles, tofu, and miso soup among bowls and sprinkle on toppings of choice. Enjoy immediately.
