This simple miso tofu noodle soup comes together in about 20 minutes and is an easy way to add fermented foods to your kiddo’s diet.

When it comes to quick, nourishing meals, miso tofu noodle soup is a plant-based parent’s dream. It’s cozy, packed with flavor, and loaded with nutrients to keep your family fueled. Plus, thanks to its simple ingredients and customizable toppings, it’s a great way to encourage kids to explore new flavors while still enjoying a familiar, slurpable meal.

The Power of Fermented Foods

Miso, the star of this soup, is a fermented soybean paste that adds an unmistakable umami depth to dishes. Fermented foods like miso are not only delicious but may also be beneficial for gut health. They contain probiotics, which support digestion and may boost immune function. Research shows that adding more fermented foods may help diversify the gut microbiome and support overall well-being.

Encouraging Adventurous Eating with Family-Style Mix-Ins

One of the best parts of this soup? The toppings! Serving mix-ins family-style lets everyone build their own bowl, giving kids a sense of autonomy over their meal. Some fun and nutritious mix-in ideas include:

ps – highly recommend these adorable shark “learning chopsticks.” They’ve gotten my kids excited to try many new meals and they come in several other cute animal options like unicorn, llama, and T-rex.

Miso Tofu Noodle Soup

This simple miso tofu noodle soup comes together in about 20 minutes and is an easy way to add fermented foods to your kiddo's diet.

Ingredients

  • 4 cups vegetable broth
  • 1 piece kombu *optional
  • 3 tablespoons white miso paste
  • 1 block firm or extra firm tofu chopped
  • 8 oz noodles of choice (udon or soba)

Optional Toppings

  • 1/2 cup green onions sliced
  • 1/2 cup edamame
  • 4-5 sheets nori crumbled
  • 1 tablespoon sesame seeds

Instructions

  • Add 4 cups of vegetable broth to a medium-sized pot. If using kombu, add to the pot and bring to a simmer for 10 minutes. If omitting kombu, simply bring to a simmer then proceed to step 2.
  • In a small bowl, whisk together miso paste and 2 tablespoons of the warm broth. Then, add miso to the vegetable broth and stir to combine. If using kombu, remove from the pot.
  • Add tofu to the pot and continue simmering for 5 minutes.
  • While the tofu cooks, cook noodles according to package directions. Drain and set aside.
  • Distribute noodles, tofu, and miso soup among bowls and sprinkle on toppings of choice. Enjoy immediately.
