Miso Tofu Noodle Soup
Ingredients
- 4 cups vegetable broth
- 1 piece kombu *optional
- 3 tablespoons white miso paste
- 1 block firm or extra firm tofu chopped
- 8 oz noodles of choice (udon or soba)
Optional Toppings
- 1/2 cup green onions sliced
- 1/2 cup edamame
- 4-5 sheets nori crumbled
- 1 tablespoon sesame seeds
Instructions
- Add 4 cups of vegetable broth to a medium-sized pot. If using kombu, add to the pot and bring to a simmer for 10 minutes. If omitting kombu, simply bring to a simmer then proceed to step 2.
- In a small bowl, whisk together miso paste and 2 tablespoons of the warm broth. Then, add miso to the vegetable broth and stir to combine. If using kombu, remove from the pot.
- Add tofu to the pot and continue simmering for 5 minutes.
- While the tofu cooks, cook noodles according to package directions. Drain and set aside.
- Distribute noodles, tofu, and miso soup among bowls and sprinkle on toppings of choice. Enjoy immediately.
