These scrumptious snacks are made with just four ingredients and require no baking. Plus, they’re whole grain, healthy fat-filled, and our kiddos love them!
In a large bowl combine, brown rice cereal, natural peanut butter, and maple syrup.
3 cups brown rice cereal, 1 cup natural peanut butter, 1/3 cup maple syrup
Stir to coat all the crispies, then press into a 9 x 12 parchment paper lined baking pan.
In a small bowl, combine chocolate chips with coconut oil.
1 cup chocolate chips, 1 Tablespoon coconut oil
Microwave for 30 seconds at a time, stirring, until chocolate is melted. Then drizzle over the rice crispies or spread over the whole pan.
Refrigerate for at least 30 minutes, then slice, and enjoy!
Notes
For our nut-free families, you could sub sunflower butter or tahini.
Because these are no-bake, they don't stay too long out of the fridge, so they might not be too sturdy for a lunchbox. However, they're a great after-school snack, or even for breakfast! They're nice and filling and will keep your kiddos full for a while.
We found this brown rice cereal at Whole Foods, but we would guess that Sprouts or Trader Joe's would have it, too.
Other nut butters like almond butter or cashew butter would work as well!
