Why We Love These Peanut Butter Chocolate Brown Rice Crispy Treats
These peanut butter chocolate brown rice crispy treats couldn’t be easier to make and they’re absolutely delicious! We’re always on the lookout for healthy, simple snacks and these fit the bill. They’re a great way to get a few more whole grains into your kiddo’s diet. They’re also filled with healthy fats from the peanut butter. Kids under age 2 should be getting about 30%-40% of their daily calories from fat. These treats are a yummy way to reach that number. Finally, they’re a great recipe to get your kiddos involved in making. They might get a little sticky, and it might take you a bit longer to make them. But getting your kids helping in the kitchen is a great way to help them build a lifelong, positive relationship with healthy, plant-based food.
How To Make Them
In a large bowl combine, 3 cups brown rice cereal, 1 cup natural peanut butter, and 1/3 cup maple syrup.
Stir to coat all the crispies, then press into a 9 x 12 parchment paper lined baking pan.
In a small bowl, combine 1 cup chocolate chips with 1 tablespoon coconut oil.
Microwave for 30 seconds at a time, stirring, until chocolate is melted. Then drizzle over the rice crispies or spread over the whole pan.
Refrigerate for at least 30 minutes, then slice, and enjoy!
I don’t know if the adults or the kids in my family liked these more but they were gone in just two days!
Tips for Success
- For our nut-free families, you could sub sunflower butter or tahini.
- Because these are no-bake, they don’t stay too long out of the fridge, so they might not be too sturdy for a lunchbox. However, they’re a great after-school snack, or even for breakfast! They’re nice and filling and will keep your kiddos full for a while.
- We found this brown rice cereal at Whole Foods, but we would guess that Sprouts or Trader Joe’s would have it, too.
- Other nut butters like almond butter or cashew butter would work as well!
