This sweet, creamy smoothie is loaded with fall flavor and packed with vitamin A, an important nutrient for supporting your kiddo’s immune system during sick season.
Prepare your potato. I chopped and roasted a sweet potato, but you could just scoop canned sweet potato puree into an ice cube tray or silicone mold to make frozen cubes. Making a "baked" sweet potato in the microwave also works.
Freeze your sweet potato. Sweet potato should be cooked before freezing.
Once you’ve got your frozen tater, in a high-powered blender combine frozen sweet potato, oats, milk of choice, dates (pitted), hemp seeds, cinnamon, alcohol-free vanilla, and a pinch of nutmeg.
