Ingredients
2mediumzucchini, sliced into fry-like shapes
1/4cup all-purpose flour
1cupunsweetened plain non-dairy milk
1cupseasoned Italian breadcrumbs
Cooking Spray
Marinara sauce, for dipping
Instructions
Slice the zucchini into fry-like sticks, then toss with the flour until well coated. You can do this in a shallow bag, or add the zucchini to a bag, add the flour, and toss until coated.
Place the milk and seasoned breadcrumbs into two seperate shallow bowl.
Dip the floured zucchini into the milk and then into the breadcrumbs, taking care to both shake off excess batter and to press the breadcrumbs into all sides of the zucchini. Place on the air fryer tray and repeat with the rest of the zucchini.
Once all zucchini has been battered, lightly spray with cooking spray. Place into a 350 degrees F preheated air fryer for 8-10 minutes, or until golden brown and crispy.
Serve right away with warmed marinara sauce (also great with our ranch dressing!)
