Sheet Pan Sausage and Veggies

One pan and easy clean up — now that’s our kinda weeknight meal. 

If you’ve got thirty minutes, then you’ve got this easy sheet pan dinner. Made with sweet potatoes, broccoli, bell peppers and your favorite veg sausage.

This sheet pan supper is so easy to make. Start by chopping all your veggies, then tossing with oil of choice, salt, pepper and Italian seasoning.

Roast those until tender, then add in sliced vegan sausage and cook until browned and crispy.

What Kind of Vegan Sausage Is Best?

We’re fans of meat alternatives, especially seitan-based options, like the Field Roast ones we are using here. Seitan is a good source of protein, iron and fiber and makes for a nice alternative from beans, tofu and tempeh.

The only draw back is that it tends to be higher in sodium, so we limit it for those under 1.

What about other vegan alternatives, like Beyond or Impossible? Our friend, Dr. Matthew Nagra, recently authored this review looking at Plant-Based Meat Alternatives (PBMAs) and cardiovascular disease (CVD), including an evaluation of their nutritional profile and impact on CVD risk factors.

While the nutrition of PBMAs vary depending on brand, compared to meat, they are usually lower in saturated fat and higher in polyunsaturated fat and dietary fiber. Some dietary trials that have replaced meat with PBMAs have reported improvements in CVD risk factors, including total cholesterol, low-density lipoprotein cholesterol, apolipoprotein B-100, and body weight.

There is no evidence suggesting that the concerning aspects of PMBAs (eg, food processing and high sodium content) negate the potential cardiovascular benefits.

Whatever sausage you end up using, we’re confident you are going to like this plant-based dinner! For a quick meal, we served it as is, but it would also be great paired with a side of pesto for dipping!

Sheet Pan Sausage and Vegetables

Made with sweet potatoes, broccoli, bell peppers and your favorite veg sausage.

Cook Time:12 minutes minutes
Servings:4 people

Ingredients

  • 2 large sweet potato diced
  • 1 large red bell pepper diced
  • 1 head broccoli chopped into small florets
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 1/2 teaspoon salt reduce if seasoning blend contains salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 package vegan sausage Italian flavor, if preferred

Instructions

  • Preheat oven to 425 degrees F.
  • Add the sweet potato, pepper, broccoli to a large bowl and toss with olive oil, Italian seasoning, salt and pepper
  • Place in a single layer on a sheet pan and roast for 20-25 minutes, until vegetables are just fork tender
  • Slice the sausage and add the last 5-10 minutes of cooking time, until warmed through and slightly crispy on top
