A simple weeknight dinner featuring frozen dumplings, edamame, spinach, and carrots.

Another quick and easy recipe for you– using frozen edamame, frozen dumplings, and a few flavor enhancements, like ginger, garlic, and scallions.
This one is ready in less than 30 minutes and is great for the entire family. Each serving also features all of the PB3 components– dumplings for grains, edamame for protein-rich food, and spinach and carrots for the vegetable and fruit category.

Quick and Easy Dumpling Soup

Ingredients
- 1 tablespoon toasted sesame oil
- 2 tablespoons minced fresh ginger
- 4 garlic cloves minced
- 2 tablespoons soy sauce
- 1/2 cup thinly sliced scallions
- 2 large carrots, diced or thinly sliced
- 6 cups vegetable broth
- 1 cup frozen edamame
- 1 bag frozen dumplings, potstickers or the like
- 2 cups fresh spinach, packed
- salt, to taste
Instructions
- Heat the sesame oil in a soup pot or dutch oven over medium heat.
- Add the ginger, garlic and cook for one minute, stirring often until fragrant, taking care not to burn.
- Add the soy sauce, carrots and scallions and cook another 30 seconds, then add the broth and bring to a boil.
- Add the edamame and dumplings and cook until tender. Remove from heat, then stir in the spinach until just wilted. Taste, adding salt/soy sauce as desired.
