Sheet Pan Gnocchi with Sausage and Peppers

The easiest dinner for weeknight meals! Slice the peppers, slice the sausage, then toss with packaged gnocchi, olive oil and seasonings.

Bake until the gnocchi is tender, the peppers have softened, and the sausage is cooked through. So simple and delicious!

We love this recipe as an easy dinner meal. You can use any sausage that you’d like; I prefer Field Roast Italian sausage, but Impossible or Beyond sausage will work as well.

I haven’t used cauliflower gnocchi, but several readers said that they have used the Trader Joe’s cauliflower gnocchi as the gnocchi!

Sheet Pan Italian Gnocchi with Vegan Sausage

An easy dinner using packaged gnocchi, rainbow peppers and vegan sausage.

Equipment

  • Sheet Pan

Ingredients

  • 1 16-ounce package vaccum sealed gnocchi
  • 1 package vegan sausage of choice I used Field Roast Italian sausage
  • 1 pint cherry tomatoes halved
  • 2 each bell peppers chopped
  • 2-3 tablespoons olive oil
  • 1/2 teaspoon each salt and pepper

Instructions

  • Preheat oven to 350 degrees F.
  • Toss all ingredients together, you can do this in a bowl or right on the sheet pan for ease: sausage, gnocchi, cherry tomatoes, bell peppers, olive oil, salt and pepper
  • Place in a single layer on the sheet pan and roast for 20 minutes, stirring halfway through
