We love these strawberry overnight oats for meal prep, especially during this busy back-to-school season.

They are so easy and easy to scale up– feel free to double or even triple the recipe to make a bunch of jars at once! We love these mini jars that we use in our chocolate pudding, fruit yogurt, chia pudding, etc. but mason jars also work.

For extra flavor, we like to macerate the strawberries in maple syrup before adding them to the oats. You can also do this right before serving!

Strawberry Overnight Oats

Overnight oats with strawberries! A simple meal-prep breakfast recipe.

Servings:4 jars

Ingredients

  • 2 cups rolled oats
  • 4 cups fortified milk of choice
  • 4 teaspoons chia seeds
  • 4 tablespoons unsweetened yogurt of choice
  • 4 teaspoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup finely chopped fresh strawberries

Instructions

  • Divide into each jar: 1/2 cup rolled oats, 1 cup milk, 1 teaspoon chia seeds, 1 tablespoon yogurt, 1/2 teaspoon maple syrup and 1/4 teaspoon vanilla extract. Mix well. Place in the fridge for 30 minutes to briefly set.
  • Mix the chopped fresh strawberries with the remaning 2 teaspoons of maple syrup and mash gently. Let sit while the oats are in the fridge for 30 minues.
  • Remove the jars from the fridge and mix again, then divide the strawberries on top of the oats, and place back in the fridge for 6-8 hours.

Notes

Steel cut oats won’t work. I like instant oats for very creamy overnight oats, or rolled oats for more texture.
