The greenest spaghetti in all the land! Which we’re calling MONSTER PASTA because it’s just more fun.

Broccoli + peas + kale pesto is what’s in this but any green works! Sub regular pesto, the kale lemon sauce from our book, The Plant-Based Baby & Toddler, or try chopped kale or spinach or broccoli in place of the broccoli or edamame or lima beans for the peas. It’s a customizable type of recipe!

Why We Love This Recipe

Making a healthy, nutrient-dense, plant-based recipe doesn’t have to be complicated. This recipe uses frozen peas and store-bought pesto sauce – and that’s okay! You don’t need to spend hours in the kitchen to prepare a healthy meal. We chose to use fresh broccoli but honestly you could use frozen broccoli in this recipe as long as you add it about halfway into cooking the pasta, a few minutes before you add the frozen peas. With broccoli, peas, and kale pesto, this monster pasta packs in plenty of green. It’s a simple, one-pot meal!

This makes ~2-3 servings, but you can easily double it for a family of 4+!

Monster Green Pasta

The greenest spaghetti in all the land! Which, on October 28th, we’re calling MONSTER PASTA because it’s just more fun. This is also what I plan on serving before trick-or-treat!

Servings:3 servings

Ingredients

  • 8 oz pasta
  • 1/3 cup frozen peas
  • 1 1/2 cups broccoli (chopped)
  • 1/2-1/3 cup prepared pesto of choice (see note)

Instructions

  • Cook 8 pasta according to package directions.
  • About 3 minutes before pasta is said to be done, add in 1/3 cup frozen peas & 1 1/2 cups chopped broccoli. Drain, reserving 1/3 cup pasta water.
  • Add back to pot with 1/3 – 1/2 prepared pesto of choice (were partial to Trader Joe's kale pesto) and a splash of pasta water. Toss, toss, toss until well combined.
  • Enjoy as is, or stir in grated parm (regular/dairy free) if you like!

  • We’re partial to using Trader Joe’s Kale Pesto.
