One-Pan Plant-Based Tortellini & Sausage

This One-Pan Plant-Based Tortellini & Sausage comes together quickly and easily and bring the flavor.

As a moms and dietitians, we love cooking. But we also deeply appreciate meals that don’t require multiple pots, 12 ingredients we don’t have, or a meditation session beforehand. Some nights we want nourishing; some nights we need fast. This One-Pan Plant-Based Tortellini & Sausage does both.

What we love most about this dish is how it blends convenience with whole-food nutrition — something we talk about a lot at Plant-Based Juniors. There’s a misconception that you’re either eating 100% whole foods or you’ve “given up” and gone full convenience mode. In reality, most families live in the middle. Pairing thoughtfully chosen plant-based products with vegetables, legumes, and nutrient-rich additions is a practical, sustainable way to keep your family well-fed without losing your mind in the process.

This recipe is a perfect example. We start with plant-based sausage — we used Field Roast’s Apple Sage because it delivers amazing flavor and kid-friendly sweetness. Then we add a package of tortellini (Kite Hill makes a delicious plant-based version) because on a weeknight, boiling a separate pot of pasta feels like an extreme sport. Convenience foods like these can absolutely fit into a balanced diet, especially when you layer them with whole-food ingredients.

That’s where the silken tofu comes in. When blended, it creates a creamy, velvety sauce that tastes indulgent but is secretly packed with protein, iron, and calcium. It’s one of our favorite “RD mom hacks” for boosting nutrition in dishes that kids already love. Add in a can of diced tomatoes for brightness and a couple of handfuls of greens (kale, spinach — whatever you’ve got wilting in the fridge), and you’ve built a full, nourishing meal with very little fuss.

Everything cooks in one pan, which means less cleanup and more time to actually sit down and enjoy dinner. The whole dish comes together in about 15 minutes, making it a perfect option for busy school nights, after-soccer practices, or evenings when you just don’t have the mental bandwidth for anything elaborate.

Most importantly, it’s a meal kids genuinely enjoy. The creamy sauce, the comforting tortellini, the savory sausage — it all feels familiar and satisfying, while still offering solid nutrition for growing bodies.

This One-Pan Plant-Based Tortellini & Sausage is easy, comforting, and kid-friendly.

Ingredients

  • 1 tablespoon oil
  • 12 oz plant-based sausage chopped
  • 1 package silken tofu
  • 3 cloves garlic minced
  • 1/4 cup vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 package tortellini
  • 2 cups greens of choice
  • salt and pepper

Instructions

  • Heat oil in a medium-sized skillet over medium heat and cook sausage until browned, about 5 minutes.
  • While sausage cooks, puree silken tofu in a blender or using a hand mixer.
  • Add garlic to the pan and sauté for 1 minute.
  • Add broth, diced tomatoes, pureed tofu, and tortellini and cook, covered, for about 5 minutes until sauce thickens. 
  • Add greens and cook for 1-2 minutes more to wilt.
  • Add salt and pepper if needed.
