Pizza Beans! Our kids love pizza, why not give the same flavor profile to BEANS?

You can’t go wrong in a recipe that combines our kids’ favorite food – pizza, with our favorite food – beans! These are so customizable! I do red bell pepper because I think it adds to the pizza flavor, but any veggie would work! I think you could also do a veg sausage/pepperoni but haven’t tried that.

Why We Love This Recipe

It’s often a challenge to figure out how to serve beans to kids, especially if you weren’t served them growing up. That’s why we love that this recipe incorporates a flavor kids are already familiar with – pizza! Furthermore, beans are a powerhouse of nutrition – complex carbs and fiber, B vitamins, iron, calcium, and potassium. They are easily prepared, are inexpensive, and are one of the most common, and best shelf stable pantry staples to keep on hand. Finally, pizza beans can be eaten so many different ways! We loved this with toasted bread the first night and leftovers got tossed with more sauce, fresh basil and orzo pasta!

Pizza Beans

Pizza Beans! Our kids love pizza, why not give the same flavor profile to BEANS?

Ingredients

  • 1/2 white onion, chopped
  • 1 red bell pepper, diced
  • 2 garlic cloves
  • 2 teaspoons pizza seasoning
  • 2 15-ounce cans white beans, drained and rinsed
  • 1 15-ounce can tomato sauce
  • 1 1/2 cups broth

Instructions

  • Sauté 1/2 chopped white onion, 1 diced red bell pepper and 2 garlic cloves until softened.
  • Add in 2 teaspoons pizza seasoning (I use a blend from Penzeys Spices, but Italian seasoning and a little fennel/sage work too! Or just season with dried oregano/basil).
  • Add in 2 15-ounce cans white beans (drained and rinsed) and 1 15-ounce can tomato sauce and 1 1/2 cups broth.
  • Simmer for 15-20 minutes, stirring often.
  • Top with cheese of choice if you want (I did a little parm) and serve! We loved this with toasted bread the first night and leftovers got tossed with more sauce, fresh basil and orzo pasta!

Notes

  • Enjoy these as is, or over toasted bread, polenta, or pasta!
