Leftover Rice Breakfast Bowls

April 9, 2024 Alex Caspero and Whitney English

Jump to Recipe

We’ve always got leftover grains in my house— so I decided to make a breakfast bowl with leftover rice! It’s hearty and filling, and can work with any leftover cooked grain.

A bowl of warm leftover rice mixed with soy milk and cinnamon, and topped with chopped apples, sliced bananas, hemp seeds, chia seeds, and a drizzle of peanut butter and local honey

Start by warming leftover rice with cinnamon and milk. Then you can add whatever toppings you like! We like chopped apple, banana slices, hemp seeds, and chia seeds along with a drizzle of peanut butter and local honey. Pears would also work! And any toasted chopped nuts would be yummy too.

Why We Like This Recipe

There are so many facets of this recipe that make it great. First, it’s a fun way to use up leftover grains that might otherwise get lost in the back of the refrigerator. Second, it’s something different to make for breakfast that still taps into the yummy flavors you might be used to in your morning oatmeal, like bananas and nut butter. Third, the best recipes are customizable and this one works with whatever toppings your kiddos like best.

Furthermore, starting your morning off with grains is one of the best ways to fuel your body. Grains are filled with fiber, protein, and a collection of micronutrients such as iron, copper, zinc, magnesium, folate, and manganese. There are so many different ways to use grains. And while you may be used to incorporating them into dinner, you can double their benefit by trying them for breakfast, too! Rice is a great choice for a breakfast bowls like this because it is easily digestible and has a neutral flavor. Quinoa and farro would also be good bases. Give them a try!

If your kids like oatmeal, then you’ll want to try these Leftover Rice Breakfast Bowls.
