Watermelon Slushies

These creamy watermelon slushies kinda remind me of an orange crush, but with frozen watermelon instead of oranges.

I originally set out to test a frozen watermelon sorbet, but found that the texture was a bit too tart just using frozen watermelon and lime juice. So, I opened a can of creamy coconut milk, added a little to that, and it ended up mellowing the tartness and providing a nice creamy texture.

My kids loved this one! I had a very ripe watermelon, so I didn’t end up adding any maple syrup, but if your watermelon isn’t very sweet, you may need to add some sweetener.

One of my kids loves coconut milk, so I ended up drizzling a little over the finished slushie.

Two big things to note– your watermelon must be frozen for the texture to be right. I cubed one, placed it on parchment paper in the freezer until frozen, then stored it in a freezer-safe bag.

I made this in a food processor, but a blender will work too! I like to break down the watermelon first in the food processor and then add the rest of the ingredients to create a creamy, smooth texture.

Creamy Watermelon Coconut Slushie

One part creamy watermelon smoothie and one part sorbet, the perfect hot weather snack! Just 3 ingredients and 5 minutes for the creamiest watermelon slushie. Frozen watermelon, lime, and coconut milk make the perfect summer drink.

Equipment

  • Blender or food processor

Ingredients

  • 3 cups frozen cubed watermelon
  • 3-4 Tablespoons lime juice
  • 1/4 cup canned coconut milk
  • 1-2 Tablespoons maple syrup optional

Instructions

  • Place the watermelon in a blender or food processor and pulse a few time to break down into smaller pieces.
  • Add the lime juice and coconut milk and puree until creamy and smooth; it should be thick like sorbet; if it's too wet, you can add more frozen watermelon or ice cubes to make it thicker.
  • Taste, then adjust as needed, and serve. Depending on the sweetness of your watermelon, you can add maple syrup if you like!
